Amaretto Chocolate Cookies

 
 

Ingredients

5 Xocai Healthy Chocolate Nuggets, grated
2 cups almond meal ((ready-to-use ground-up almonds))
1/2 cup sugar
3 whole egg whites
3/4 tbsp almond extract
1 tbsp amaretto liqueur

Preparation

Mix first three ingredients in a bowl. Beat egg whites until not quite stiff in a separate bowl. Add almond extract and amaretto to the egg whites; gradually add dry ingredients. Mix well. With two teaspoons, form walnut sized potions and place on parchment-lined cookie sheet. Let dry at room temperature at least 6 hours or overnight. Bake at 350 degrees for about 12 minutes. Makes 24 cookies

Xocai Oatmeal Dark Chocolate No-Bake Cookies

 
 

Ingredients

2 cups sugar substitute
1/2 cup butter substitute
1/2 cup soy milk
1 tsp vanilla
1/2 cup peanut butter ((optional))
3 cups oats
1 Xocai Healthy Chocolate Nugget, chopped

Preparation

Combine the first four ingredient in a medium sauce pan. Heat mixture until it boils. Boils for 5 minutes, stirring constantly. Remove from heat and stir in remaining ingredients. Add the Nuggets last. Drop by spoonful onto wax paper or foil. Cookies will harden as they cool. Makes 24 cookies

Sweet and Salty Healthy Chocolate Treat

 
 

Ingredients

6 Xocai Healthy Chocolate Nuggets
2-3 drops pure mint extract
12 round butter crackers

Preparation

In a double boiler, melt the Nuggets on low heat, stirring often. Once the Nuggets are melted to a smooth consistency, add 2-3 (depending on our taste) drops of mint extract. Be very careful not to add too much of the extract or the chocolate will harden and you will have to add more Nuggets. Drop one of the round butter crackers into the melted Nuggets and using two forks, flip the cracker until completely coated with the melted Nuggets. Place the coated cracker on wax paper to harden. Repeat with remaining crackers. Keep in a sealed container or in the fringe. Makes 12 treats

Chocolate Cherry Almond Nuggets

 
 

Ingredients

12 Xocai Healthy Chocolate Omega Squares
2 tbsps orange juice (or water)
1 tsp orange juice (or water)
24 whole almonds (raw unsalted)
2 tbsps dried cherry (or cranberries)

Preparation

Break Omega Squares into small pieces and place in double boiler with orange juice or water. Place on low heat just long enough to melt the pieces of chocolate. (You may choose to put this in the microwave. It is much faster, and takes only 30 seconds to melt.) Chop- Do Not Grind- 24 unsalted raw almonds into small pieces. Cut dries fruit into small pieces. Stir all together until well blended. Place on waxed paper, small teaspoons-sized drops of mixture and place in refrigerator 1-2 hours. Makes 12 Nuggets

Ingredients

10 Xocai Healthy Chocolate XoBiotic Squares
12 Pretzel Rods
1 1/2 cups Assorted candy sprinkles, crushed cookies, toffee bits, nuts, or mini candies

Preparation

Heat Xocai XoBiotic Squares in the microwave in 10-secoind intervals until melted. Ladle melted XoBiotic Squares over 3/4 of each pretzel rod. Tap or scrape off excess, then roll pretzel in assorted candy sprinkles, crushed cookies, toffee bits, nuts, or mini candies. Dry on a cooling rack until set. Makes 12 rods

Golden Nugget Almond Clusters

 
 

Ingredients

15-20 Xocai Healthy Chocolate Nuggets
6 ozs raw almonds

Preparation

Melt chocolate in a fondue pot. Cluster 5-6 medium-sized almonds together on foil and spoon one teaspoon of melted Nuggets slowly onto the almonds. Repeat this process to make a complete batch. Let cool in the refrigerator for approximately 15-20 minutes. Makes 12 Clusters

Xocai Dark Chocolate Dipped Blackberries

 
 

Ingredients

30 chunks dark chocolate (Xocai Healthy Dark Chocolate Nuggets)
30 whole blackberries (30+ large blackberries, frozen or fresh (frozen works best))

Preparation

Place the Nuggets in a glass 2-cup measuring cup. Melt in microwave or double boiler and heat just long enough to soften and melt. Do not overheat the Nuggets. Stir during the melting process until it is smooth and without lumps. The Nuggets should be warm and not too hot to touch. Using a toothpick, dip each berry completely into the melted Nuggets and let as much drip off as possible. Place the Nugget-covered berries onto wax paper to cool. Keep refrigerated until ready to eat. Makes 30 berries

12 Xocai Healthy Chocolate Nuggets, melted
1 cup almonds (whole almonds, walnuts or pecans)
1 tsp coarse salt

Ingredients

4 Xocai Healthy Chocolate Nuggets
1/2 cup dates (chopped)
1/2 cup almonds
1 tsp almond extract
1 tsp honey
1/2 cup cocoa powder (or shredded coconut)

Preparation

Chop Nuggets in food processor until chocolate chip size. Add dates, nuts and extract and process until texture resembles bread crumbs. Drizzle honey while processing until mixture forms soft dough. Roll into 1-inch balls and coat with your choice of cocoa powder or shredded coconut. Makes 12 balls

Chocolate-Peanut Butter Cups with Xocai Healthy Chocolate

Ingredients

BASE
1/4 C Brown Sugar
1 C Powdered Sugar
1/4 C Melted Butter
1 C Natural peanut butter or regular
TOPPING
1 C Xocai Sipping Xocolate
1 TBSP Brewed coffee
1 TBSP Vanilla Extract
3 TBSP Heavy Cream

Preparation

Blend all ingredients together until combined. Line either a 48-mini muffin pan or a 24-muffin pan with liners. Divide mixture evenly in muffin tins.

Microwave all ingredients for 30 seconds. Remove and stir until all blended. Divide evenly on top of peanut butter base. spread to cover mixture.

Xocai Healthy Chocolate Dreams

 
 

Ingredients

32-34 Xocai Healthy Chocolate Nuggets
1 tsp vanilla
1/2 cup peanut butter (or almond butter)
3 cups oats
1/2 cup coconut
1 can sweetened condensed milk (fat-free)

Preparation

Melt Nuggets in slow-melt low-temp pot (110-degree limit). When melted, stir in vanilla and peanut or almond butter. Mix together in same pot until smooth. In large bowl combine oats and coconut. Set aside. Add sweetened condensed milk to the hot mixture. Stir until mixture is smooth. Add hot mixture to oats. Mix until all oats are covered. Drop spoonfuls on top cookie sheet covered with parchment or wax paper. Refrigerate or serve at room temperature. Makes 24 candies

Xocai Healthy Chocolate Polka Dots

 
 

Ingredients

3 whole egg whites (at room temperature)
12 tsp cream of tartar
18 tsp salt
34 cup sugar
1 tsp vanilla extract
12 cup dark chocolate (Xocai Healthy Chocolate XoBiotic Squares, melted)

Preparation

Preheat oven to 350 degrees. Spray 2 baking sheets with nonstick cooking spray and cover with parchment paper (not wax paper). In a bowl beat the egg whites, cream of tarter, and salt at high speed with electric mixer. Continue to beat egg whites until soft peaks form. Add sugar slowly, a little at a time. Continue to beat for 2 minutes, or until stiff, shiny peaks form. Using a large rubber spatula, fold in vanilla extract and melted XoBiotic Squares. Place in pastry bag, or use a large zippered bag and cut 1/2 inch of the tip off. Pipe one inch dots onto the baking sheet and bake for about 25 minutes or until the tips are brown. Cool on wire rack completely and store in an airtight container. Makes 50 dots

4 cups sugar
2 cans evaporated milk
1 cup butter (or margarine)
2 cups Xocai Healthy Chocolate x Power Squares, chopped
1 tsp vanilla
1/2 cup chopped almonds

Mix sugar, milk and butter over low heat until mixture boils, stirring mixture constantly, for about 12 minutes. Remove from heat and add X Power Squares, vanilla, and nuts. Pour into a 9x9 inch greased pan. Refrigerate until set. Makes 24 candies

Xocai Toffee Bark

 
 

Ingredients

1 package saltines
1 cup butter
1 cup brown sugar
6 ozs Xocai Sippping Xocolate or Xocai Nuggets, grated
1/4 cup chopped pecans

Preparation

Spread sleeve of saltine crackers on cookie sheet that is covered with foil until the entire sheet is covered. Bring butter and brown sugar to a rolling boil; let boil for 4 minutes, then pour mixture over saltines. Place in 400 degree oven for 5 minutes. Remove from oven and sprinkle Sipping Xocolate over saltines and let melt, Spread evenly and top with chopped pecans. Let cool in refrigerator for about 20 minutes. Turn out on table; peel foil off and break into pieces and serve. Makes 24 candies

Ingredients

8 Xocai Nuggets
4 tbsps hemp hearts
1 tbsp golden flax seed
2 tsps unsweetened coconut
1 1/2 tsps cinnamon
1 1/2 cups dried cranberries (chopped )

Preparation

Heavenly Xocai Healthy Chocolate Turtles

 
 

Ingredients

8 squares caramels (small squares caramel candies)
1 tsp milk (or almond milk)
40 chunks pecans (40-50 pecan halves or whole almonds)
6 chunks dark chocolate (Xocai Healthy Chocolate Nuggets)

Preparation

n a double boiler, melt about 8 small caramel candy squares with milk. Place 5 pecans or almonds in a circle on wax paper to form legs and head of turtle. Pour small spoonfuls of melted caramel onto almonds or pecans in the center of the turtle to hold together. Let cool. Melt 6 Xocai Nuggets in fondue pot on low. Pour small spoonfuls of melted Nuggets over caramel then let cool.

Xocai Chocolate Souffle Cakes

Ingredients

12 ozs dark chocolate (Xocai X Power Squares, chopped and divided)
6 tbsps butter
6 whole large eggs (separated)
1/2 cup sugar
3 cups water

Preparation

Preheat oven to 375 degrees. Butter and flour eight 3/4 cup souffle dishes. Stir 8 oz. of chopped X Power Squares with butter in a heavy medium saucepan over low heat until melted and smooth. Pour into a large bowl. Whisk in yokes. Set chocolate mixture aside. Stir sugar and water in a heavy small saucepan over low heat until sugar dissolves. Increase heat and boil without stirring until candy thermometer registers 236 degrees, swirling pan occasionally, about 5 minutes. Meanwhile, beat egg whites in another large bowl to soft peaks. Gradually beat boiling syrup into egg whites in slow steady stream. Continue beating until stiff, about 3 minutes. Fold whites into X Power Squares mixture in 3 additions. Divide the remaining 4 oz. of X Power Squares between the 8 dishes, pressing the X Power Squares into the souffles to submerge them. Bake souffles until slightly puffed and softly set, about 15 minutes. Serve immediately. Serves 8

Xocai Healthy Chocolate Sweet Gravel (low fat)

 
 

Ingredients

2 cups graham cracker crumbs (devided)
1 12 cups rolled oats
34 cup maple syrup
4 whole bananas (ripe, peeled and thinly sliced)
1 can mandarin oranges (11 oz can)
12 cup dark chocolate (Xocai Sipping Xocolate)

Preparation

Preheat oven to 375 degrees. Coat a nonstick 9x13 inch oblong pan with non stick cooking spray. Mix 1 1/2 cup cracker crumbs and rolled oats and press into pan. Cover crust evenly with bananas. Top the bananas with the mandarin oranges and Sipping Xocolate. Cover with maple syrup. Sprinkle the remaining 1/2 cup graham crackers over top. Bake for 8 to 10 minutes or until Sipping Xocolate is melted. Serve warm with a scoop of nonfat frozen yogurt or sprinkle with fresh berries. Serves 6-8

6 whole gala apples (FILLING cored and diced (medium diced))
1 cup steel-cut oats (FILLING)

1/4 cup brown sugar (FILLING)

Preparation

Preheat oven to 375 degrees. Combine filling ingredients and mix then together and place in a greased casserole or baking pan. Mix topping ingredients to make a crumb topping consistency, like small peas. Sprinkle over the top of the filling mixture, and then bake in oven for 25 to 30 minutes or until apples are soft.

Chocolate Black Cherry Almond Cobbler

 
 

Ingredients

2 cups cherries (black cherries, washed, pitted and drained)
1/2 tsp almond extract
1 tsp dark chocolate (Xocai Activ Powder)
1 cup flour
1 tsp sugar
1 1/2 tsps baking powder
1 dash salt
3 tbsps butter
1/2 cup low-fat milk
2 tbsps chopped almonds

Preparation

Heat oven to 450 degrees and spray 1 1/2- quart casserole dish. Add cherries, almond extract, and sprinkle with Xocai Activ. Mix flour, sugar, baking powder and salt in a bowl. Cut in batter and add milk. Stir in almonds and mix until dough forms a ball. Drop dough by the spoonful into pie filling and bake about 30 minutes or until dough is golden brown. Top warm cobbler with whipped cream or ice cream. Serves 6-8
